Chocolate Mousse

INGREDIENTS

Serves 4

1 cup dark chocolate chips (70% cacao)

1 ⅔ cups heavy cream

2 teaspoons vanilla extract

¼ teaspoon fine sea salt

4 egg whites

½ cup sugar

Cocoa power, for garnish

Instructions

In a double boiler over simmering water, melt the chocolate and transfer to a large bowl. Set aside to cool to 90°F. Meanwhile, in a bowl, with an electric mixer, whip the cream, vanilla, and salt until stiff peaks form. Transfer to another bowl and keep cold. In a clean bowl, whip the egg whites with the sugar until stiff peaks form. Set aside.

When the chocolate has cooled to 90°F, slowly fold half the egg whites into the melted chocolate, then repeat with half the whipped cream. Repeat with remaining egg whites then whipped cream until fully incorporated. Refrigerate the mousse to chill.

To serve, divide chocolate mousse among four chilled cups and garnish with cocoa powder.
